Thanksgiving Dessert // Pumpkin Chocolate Chip Muffins

226 I have been making these muffins for a few years and they. are. so. good.  And so easy to make, even I can figure it out!  If you are looking for a delicious, simple, pumpkin dessert for Thanksgiving, try these out.  You won’t be disappointed.  A special thanks to my mom for this recipe!

Mix Together (with handheld electronic beater):

  1. 3 C Sugar
  2. 1 C vegetable oil
  3. 2/3 C water
  4. 4 eggs, beaten
  5. 1-2 cans of 16 oz pumpkin (I use about 24 ounces, which is about 1.5 cans,  as I love the pumpkin flavor)

Add in and Continue Mixing:

  1. 3 1/3 C flour
  2. 1/2 tsp baking powder
  3. 2 tsp baking soda
  4. 2 tblsp cinnamon (I use more than this, usually about 3 tblsp)
  5. 1 tsp salt

Once mixed well, add 1 package of Nestle Toll House Semi-Sweet chocolate chips.  Put into muffin tins (recipe yields 24) with paper muffin wrappers (vs. putting batter direct in pan).

Bake at 350 for about 20 minutes (depends on oven).  I check on them at 12 minutes and then again at 15 becuase I am anal.  Stick a toothpick in them and when the toothpick comes out without a runny batter, they are done!  Enjoy and don’t forget to share!
